Objective
At the end of the course the student must present integrated knowledge about the ruminal and postruminal
metabolism of lipids and their implications on post-absorptive metabolism, animal performance
and lipid composition of tissues and milk.

Content
1. Characterization of lipid sources and classification of fatty acids. 2. Ruminal metabolism and intestinal
lipid digestibility. 3. Absorption of fatty acids and metabolism of lipoproteins. 4. Use of lipids as a
modulator of the performance of beef animals and the fatty acid profile of meat. 5. Lipolysis and lipid
metabolism in tissues. 6. Effect of fatty acids on rumen fermentation, intake, fiber digestibility and
enteric methane production. 7. Implications of the inclusion of lipids in the diet on milk production and
composition. 8. CLA: mechanism of synthesis in rumen and tissues. 9. Metabolic relationship of fatty
acids with human health. 10. Metabolic disorders related to lipid metabolism in ruminants.
