PÊSSEGO
Fruto do pessegueiro da família Rosaceae, da subfamília Prunoideae, gênero Prunuse, subgênero Amygdalus, sendo todas as variedades comerciais pertencem à espécie Prunus persica (L.) Batsch.
Nota 1 e 2: É uma espécie de clima temperado, nativa da China.No Brasil, o estado do Rio grande do Sul é o seu maior produtor. O fruto é uma drupa carnosa, com pericarpo fino, mesocarpo polposo e endocarpo lenhoso que, nas variedades comerciais, apresenta forma mais ou menos esférica, podendo, ainda, ser redonda, cônica, oblata, oblonga, elíptica ou ovalada. O pericarpo é fino, sendo solto ou aderente a polpa; a cor da epiderme varia do amarelo-claro ao alaranjado e, sobre esse fundo, existem variedades que apresentam pigmentação de rósea a vermelha. A polpa, de sabor geralmente doce-acidulado, pode ser branca ou amarelada e se apresentar livre ou aderente ao caroço, cuja forma é ovóide-achatada, com superfície acanalada e tamanho variável. No interior do caroço, são encontradas uma ou duas sementes, que têm superfície lisa e sabor amargo.

Note 1 and 2: It is native of China. In Brazil, the largest national producer is Rio Grande do Sul state. The fruit is a fleshy drupe, with thin pericarp, fleshy mesocarp and woody endocarp that, in the commercial varieties, presents a kind of spherical shape, and it can still rounded, conical, oblate, oblong, elliptical or oval. The pericarp is thin, being free or adherent to the pulp; the epidermis color varies from light yellow to orange and, about this deep part, there are varieties that presents to rosy color to red. The pulp, with usually sweet-acidic taste, can be white or yellowish and free or adherent to the stone fruit whose shape is oval flattened, with a striped surface and variable size. In the stone fruit, one or two seeds are found, which have smooth surface and bitter taste.
