CAIMITO
Árvore da família Sapotaceae, da espécie Chrysophyllum cainito L. (Caimito pomiferum Tuss; Chrysophyllum aquaticul H.B.K; C. bomplandii Klotz; C. caeruleum Jacq.; C. jamaicense Jacq.; C. maliforme L.; C. microphyllum Jacq.; C. monopyrenum Spreng; C. obtusatum Willd.; C. oliforme L.; C. ottonis Klotz; C. pomiforme Bert.; C. sericeum Salisb.).
Nota 1 e 2: Ela é nativa das Antilhas e América Central, habitando Cuba, Jamaica e o estado de São Paulo no Brasil; Ela é uma árvore maior que a do sapoti e ainda muito mais bonita, com suas folhas verde-escuras na face superior e de um castanho-bronzeado sedoso, ou seja, cobre-amarelado, na inferior; As suas folhas são simples, inteiras, mais ou menos elípticas, glabras na face superior, com um leve feltro dourado na face de baixo; O seu fruto é baga, praticamente esférica que, nas situações ótimas atinge 5-10 cm de diâmetro, pedunculada, a princípio verde e que, madura, passa a roxo-escuro, com uma casca lisa e delgada aderente à polpa, que é branca, homogênea, sumarenta, perfumada, doce e muito agradável ao paladar; O fruto contêm 2-4 ou mais sementes que são negras e semelhantes às do abiu; Pelo menos duas subvariedades são relatadas: Uma de frutos verdes e outra que os tem de coloração púrpura, mas ambas são de sabor idêntico.

Note1 and 2: It is native from the Antilles and Central America and it inhabits Cuba, Jamaica and São Paulo state in Brazil. It is a bigger and prettier tree than the sapoti one. Its leaves are dark-green on the upper face and a silky brown on the lower one. Its leaves are simple, whole, more or less elliptical, hairless on the upper face with a thin golden felt on the lower one. Its fruit is a practically round berry that, in good conditions can reach 5-10 cm of diameter, pedunculed, firstly green and when mature it turns dark-purple, with a smooth and slender skin that adheres to the pulp that is white, homogenous, juicy, perfumed, sweet and very good to the sense of taste. The fruit has 2-4 or more seeds that are black and similar to the abiu ones. There at least sub varieties are related: One with green fruits and another with purple ones, but both have the same taste.
